    Assessing the effects of different drying methods and minimal processing on the sustainability of the organic food quality

    Drying of foods is a complex process where heat and mass transfer occur simultaneously, accompanied by a reduction in volume. The penetration of continuous heat energy applied during food drying plays a significant role in inducing thermal stresses in the food. Moreover, drying is crucial in removing water with a heterogeneous distribution from the food, impacting the final food quality. Therefore, it is essential to assess and validate the effects of drying practices on the quality of foods with high nutritional value and economic significance foods obtained by organic farming are more nutritious and of higher quality compared to conventional. Although the regulations define certain rules and limits in the cultivation stage of organic foods, there are deficiencies in the definitions and rules regarding the sustainability of quality in the processing stage of these foods. This review article aims to examine the physical and chemical traits of dried organic foods, including their vitamin content, antioxidant properties, color, and texture components. The available evidence on the beneficial effects of different power and temperature levels applied with various drying systems on quality parameters in foods is reported and discussed. The results of this research indicate that the use of freeze, infrared, and intermittent microwave drying methods can lead to improved final quality of the dried foods. However, it is crucial to emphasize that the effectiveness of these techniques may vary depending on the physicochemical properties of the foods and the specific drying conditions employed. This review highlights the various drying methods that can be employed to enhance the quality of organic foods, while considering the experimental factors that can impact their processing characteristics and quality attributes.

    Combining non-destructive devices and multivariate analysis as a tool to quantify the fatty acid profiles of linseed genotypes

    Linseed (Linum usitatissimum L.) and linseed oil, with a fatty acid profile rich in both macro and micro elements, are recognized as functional foods due to their valuable positive effects on health. Fatty acids composition (FAC) is a key indicator in assessing the quality of linseeds. The FAC of linseed is typically determined using chromatographic methods, yielding highly accurate results. However, chromatographic methods entail drawbacks such as requiring pre-chemical processes, generating chemical waste, and being both expensive and timeconsuming, similar to chemical analyses. This study focused on the feasibility of colorimeter and FT-NIRS data to determine the FAC (%), protein (%) and neutral detergent fiber (NDF %) in linseed samples. By employing the PLSR analysis based on FT-NIRS, it was determined that the ratios of stearic (R2val = 0.74, RMSEP = 0.09 %), oleic (R2val = 0.75, RMSEP = 0.26 %), linoleic (R2val = 0.85, RMSEP = 0.58 %), linolenic (R2val = 0.71, RMSEP = 1.07 %), 8,11,14 eicosatrienoic (R2 val = 0.77, RMSEP = 0.02 %), margaric (R2 val = 0.71, RMSEP = 0.01 %), myristic (R2val = 0.75, RMSEP = 0.02 %), and behenic (R2val = 0.74, RMSEP = 1.12 %) in linseed could be successfully predicted. Furthermore, results demonstrated that the protein (R2val = 0.87, RMSEP = 0.9 %) and NDF (R2val = 0.90, RMSEP = 0.6 %) content in linseeds can be successfully predicted. PLSR has demonstrated that FT-NIRS has relatively higher predictive capability compared to color models.

    Comparison of total phenolic content in organic and conventional carrot under different drying conditions using non-destructive analysis techniques

    Current evidence indicates that the higher nutritional value of organic foods, compared to their conventional counterparts, significantly impacts consumer demand. However, the application of thermal processes during processing may lead to a loss of nutritional values, including total phenolics and antioxidants, thereby failing to meet consumer expectations. Phenolics, known as some of the most potent natural antioxidants and are typically assessed through biochemical tests based on the concentration and reactivity of antioxidant compounds. However, the extraction methods can affect the accuracy of phenolic content measurement. In this study, the total phenolic (TP) (mg/100 g) capacity of fresh, hot air (HA)-dried, and intermittent microwave (IMW)-dried organic and conventional black carrots were compared, and the detectability of these compounds using a colorimeter and FT-NIRS was evaluated. PLSR models developed for estimating the TP content using FT-NIRS resulted in successful outcomes (IMW: R2val = 0.78, RMSEP = 51.4 mg/100 g; HA: R2val = 0.70, RMSEP = 63.0 mg/100 g). The highest prediction accuracy was achieved with drying treatments at 300 W (R2val = 0.95, RMSEP = 5.1 mg/100 g) and 450 W (R2val = 0.83, RMSEP = 50.7 mg/100 g), as well as at 80 degrees C (R2val = 0.90, RMSEP = 21.0 mg/100 g). The drying methods significantly influenced the TP content and the accuracy of TP prediction in samples. Additionally, organic carrots contained a higher level of total phenolic compared to conventional.

    Mikrodalga Kurutma Koşullarının Ananasın Renk Kalitesi ve Stabilitesi Üzerine Etkisinin Çok Değişkenli Veri Analizleri ile Değerlendirilmesi

    Farklı kurutma yöntemleriyle üretilen meyve bazlı atıştırmalıklar, küresel gıda endüstrisinde ticari önem kazanmıştır. Uygulanan kurutma teknikleri, ürünün kalite parametrelerini belirgin şekilde etkilemektedir. Renk, gıdanın en temel kalite göstergelerinden biridir ve kurutma sürecine bağlı olarak meydana gelen istenmeyen renk değişimleri, ürünün pazarlanabilirliğini ve nihai kalitesini azaltabilir. Bu çalışmada, mikrodalga gücü (200 ve 600 W) ile dilim kalınlığının (3 ve 5 mm), ananas dilimlerinin renk stabilitesi üzerindeki etkileri araştırılmıştır. L*, a*, b*, C*, h, Beyazlık İndeksi (WI), Karamelizasyon İndeksi (BI) ve renk farkı (ΔE) gibi kolorimetrik parametreler değerlendirilmiştir. Ayrıca renk verilerine dayalı olarak Temel Bileşenler Analizi (PCA) ve Sınıf Benzetimi için Bağımsız Modelleme (SIMCA) analizleri uygulanmıştır. Bulgular, mikrodalga gücü ve dilim kalınlığının renk özelliklerini önemli ölçüde etkilediğini göstermiştir. Güç yoğunluğu ve kalınlık arttıkça L*, b*, C* ve WI değerleri azalmış; a*, ΔE ve BI değerlerinde ise artış gözlenmiş, bu durum pigment bozulmaları ve enzimatik olmayan kararma reaksiyonlarının arttığını göstermiştir. En iyi görsel kalite, 200 W ve 3 mm dilim kalınlığında elde edilmiştir. PCA, toplam varyansın %97’sini açıklamış ve örnekleri kurutma koşullarına göre ayırt etmiştir. SIMCA ise renk verilerine göre örnekleri %85 doğrulukla sınıflandırmıştır. Elde edilen veriler, renk bütünlüğünün korunması için mikrodalga gücü ve dilim kalınlığının optimize edilmesi gerektiğini ortaya koymuştur.

    Non-destructive quality assessment of fresh and dried-chili peppers: prediction of vitamin, protein, macro and micro-nutrient content via color models and multivariate analysis

    Food constituents, particularly antioxidants, vitamins, proteins, fibers, and macro-and micronutrients, are closely linked to the superior quality and desirable sensory attributes of food products, and their composition is influenced by drying methods. Food quality is traditionally assessed using chromatography or chemical analysis methods.Although these techniques provide accurate results, they are time-consuming, labor-intensive, costly, and produce chemical waste. The food industry demands rapid, cost-effective, non-destructive, and chemical-free analytical techniques. Color parameters linked to food quality have contributed significantly to the advancement of colorimetric analytical techniques. This study evaluated the effects of microwave (MD) (0.5 and 1.5 W/g), convective (CD) (50 and 80 degrees C), and vacuum (VD) (100 mmHg at 60 and 80 degrees C) drying methods on the final quality and color of chili peppers. In addition, the potential of predicting the nutritional composition of the dried samples through their color parameters was assessed. Results demonstrated that the highest values for color parameters, vitamins B1, B3, B5, B6, beta-carotene, lutein & zeaxanthin, vitamin c, as well as for protein, P, Ca, Mg, Cu, and Zn, were obtained with MD at 1.5 W/g. Successful PLSR models were developed for predicting vitamins, proteins, and macro-and micro-nutrients using L * a * b * Ch color models. The highest prediction accuracies were found for vitamin K (R2val = 0.86, RMSEP = 0.07 ppm), vitamin B6 (R2val = 0.83, RMSEP = 2.58 ppm), and Cu (R2val = 0.82, RMSEP = 0.64 ppm). Consequently, drying processes have a significant impact on both the final food quality and color parameters; moreover, quality parameters exhibit a strong correlation with color values. The study results indicated that determining food quality parameters through color measurements represents a promising approach.

    Sıcak hava ve vakumla kurutulan kereviz dilimlerinde renk kalitesi ve stabilitesinin çok değişkenli analizle değerlendirilmesi

    Kurutma sırasında meydana gelen fizikokimyasal değişiklikler, özellikle renk özellikleri, yapısal bütünlük ve besin öğelerinin stabilitesi üzerinde etkili olup, nihai ürün kalitesini belirleyen kritik faktörler olarak öne çıkmaktadır. Çeşitli sebzeler üzerinde çok sayıda kurutma çalışması yapılmasına rağmen, aromatik, tıbbi ve fonksiyonel gıda özelliklerine sahip kereviz bitkisinde farklı kurutma koşullarının renk değişimleri üzerine sınırlı bilgi bulunmaktadır. Bu çalışmada, sıcak hava ile 65 °C’de kurutma ile vakum kurutma (65 °C sıcak hava ile desteklenmiş 100 mm Hg vakum kurutma) yöntemlerinin kereviz kökü örneklerinin renk parametreleri ve görsel kalitesi üzerindeki etkileri karşılaştırmalı olarak değerlendirilmiştir. Ayrıca renk modelleri kullanılarak Temel Bileşen Analizi (PCA) ve Sınıf Benzerliğinin Yumuşak Bağımsız Modellemesi (Soft Independent Modeling of Class Analogy / SIMCA) analizleri gerçekleştirilmiştir. Sonuçlar, kurutma yöntemine bağlı olarak taze ve kurutulmuş örnekler arasında L*, a*, b*, C* ve h değerlerinde anlamlı farklılıklar olduğunu göstermiştir (p < 0.05). Sıcak hava kurutması L* ve b* değerlerinde düşüşe ve ürün renginde koyulaşmaya neden olmuş, bu da oksidatif tepkimelere bağlanmıştır. Vakumlu kurutma ise oksijen maruziyetini ve ısıl zararı azaltarak renk kalitesini taze örneğe daha yakın seviyelerde korumuştur. Taze ve vakumla kurutulmuş örneklerde negatif a* değerleri kerevizin açık tonlarını yansıtırken, sıcak hava ile kurutmada gözlenen pozitif kayma pigment bozulmasına işaret etmiştir. PCA analizleri örnekleri kurutma yöntemlerine göre başarıyla ayırt etmiş ve toplam varyansın yüzde 95’inden fazlasını açıklamıştır. SIMCA analizi ise örneklerin renk verilerine dayanarak yüzde 100 doğrulukla sınıflandırılabildiğini göstermiştir. Elde edilen bulgular, kerevizde renk kalitesini korumada vakumlu kurutmanın üstünlüğünü ortaya koymakta ve gıda endüstrisine yönelik önemli çıkarımlar sunmaktadır.
